Ingredients and Procedure:
- Prepare the vegetables: a cup of broccoli, 1 cup of carrots (cut into thin strips), 1 white onion (cut into rings) and a cup of spinach.
- Meanwhile, wash a cup of shrimps, small ones from Norway, wild caught. Set Aside.
- On a stove top, use a skillet or a saucepan, whichever you prefer to use. Heat in a low medium fire, add a slice of butter, about a teaspoon, let it melt. Sauté the shrimps quickly, about a minute or two. Add 1 tomato, cut into cubes. Cook for another 2 minutes. Remove from the pot. Set Aside on plate.
- Next, using the same pot or skillet, sautè the vegetables, add a teaspoon of coconut oil, about 3 minutes. Remove from the pot. Set Aside on another plate.
- Use a pot for cooking the linguine pasta or you can use the same pot as well. About 3-4 cups of water on the pot, add a pinch of salt, set to boil on a medium heat. When it boils, add the linguine pasta (I prefer the fresh one), follow the instructions written on the package. Usually for the freshly made linguine from Irresistbles brand, it`s about 3 minutes. Drain and set aside.
- While everything is ready, using the same pot, prepare the white sauce. Add a teaspoon of butter, 1 piece of laughing cow, 3 teaspoons of whipped cream or lactose-free milk; let it simmer for 3 minutes. Add 1/2 cup of water, add a pinch of salt to taste and a pinch of ground pepper. Add a slice of Galbani pizza mozzarella, cut into small pieces using your hands. Quickly turn off the heat.
- Lastly, prepare the plate for serving. Put first the pasta, then the shrimps, the vegetables and top it with the white sauce mixture. Add more ground black pepper, if desired.
